Grapes harvested at different ripeness levels depending on natural acidity content. These grapes are fermented in traditional open casks with regular punch downs of the head to provide colour and complexity. A proportion also undergoes carbonic maceration to develop red fruit flavours. Whole clusters are also used to provide softer tannins.
