Oreg Cornish Dry Gin
Arguably the the most important botanical in this gin is the Butterfly Blue Pea flower. it contains a group of chemicals called anthocyanins. These act as a pH indicator in the gin. When acidic tonic is added to the gin, a chemical reaction occours between the tonic and the anthocyanin groups and the gin tuns from a deep blue to a pale rosy pink.
If you aren't all that interested in the chemistry however, it is still a perfect Cornish take on the London Dry style.
