Trevethan Honey Oak
Serve with Mediterranean Tonic, a slice of apple and a couple of juniper berries.
This gin has been created using Cornish virgin oak blocks taken from the heart of a fallen oak tree - on the farm of Jon's in laws in Davidstow.
The blocks are toasted and soaked in Cornish honey for 2 weeks.
The honey soaked oak is the added to their original recipe gin and left to age for 6 weeks.
During the aging process, the gin takes on the colour and flavour of the subtle oak lignins and honey sugars released from the wood.
