'Dryade' La Villa des Nymphes

Based in a UNESCO `Biosphere reserve` under Mont Ventoux, the vineyards are made up of clay and limestone soils. The grapes are all vinified seperately and undergo ambient fermentations in concrete vats from the skins natural yeasts. Lighter macerations for a fortnight extract lighter and balanced tannic structure and fresh bright fruit. Soft and floral aromas of blackberries, iris and earthy tones are followed by a smooth, textured and spicy palate with flavours of black pepper and fresh red fruits, supported with fine structure and a lovely long finish.
